When it comes to my weekday meals I like to keep things simple. You won’t see me spend hours slaving over just one dish. Unless we’re talking about Thanksgiving, or some other major event or holiday. By the end of the day all I want to do is space out and watch a Netflix marathon, not master the art of French cooking. So I normally whip out something that is quick, easy, and delicious. I’ve also been on a health kick lately, so when PAM asked me to share a healthy recipe, I knew just what to make. My Veggie Pizzadilla! Its half quesadilla, half pizza, and a whole lot of awesome. My family loves it, and I’m sure you will too.
First start with a whole wheat tortilla. Add a spoonful of marinara sauce. Then sprinkle on some low-fat mozzarella and the veggies of your choice. My personal favorite toppings are mushrooms, onions, green peppers, and black olives. To make it more pizza-like I also added turkey pepperoni. Then place it on a heated skillet with a coating of PAM Olive Oil cooking spray. (This will not only help the tortilla not stick to the pan, but will also make the clean-up a cinch. Holla!) Cook the Pizzadilla for about 2 minutes on each side or until cheese is fully melted. Then serve it with a little extra marinara sauce on the side (optional), and voilà! Dinner is served.
